Think salads are boring? Think again! Bright and snappy peas, spicy radish and Farmer’s Cheese with fresh mint!

My love for salads is no secret, mostly because I tend to feel best when I have a Big Ass Salad in the middle of the day. I’ve been making sugar snap salads for as long as I can remember. The addition of creamy Farmer’s Cheese and bright mint make for a super refreshing addition to any meal.
Sugar snap pea salad with radish, mint & Farmer's Cheese
Ingredients
1 cup sugar snaps, cut in half
1 radish, thinly sliced
1 scallion, greens and whites, thinly sliced
small handful of pea tendrils or arugula
1 TBSP pistachio
2 sprigs mint
handful of cherries
2 TBSP EVOO
Juice of 1 lemon
coarse sea salt
a dash of Tajin seasoning or Spanish Pimenton
4 TBSP Lifeway Foods Farmer’s Cheese
Method
1. cut the tips and remove the fiber from the peas, then cut in half, lengthwise.
2. In a medium sized mixing bowl, combine all ingredients except the Farmer’s Cheese, season with salt and dress with the olive oil and lemon juice..
3. Plate in a dark plate and add the cheese.
