Gluten-free kefir pancakes with olive oil

A delicious, not-unhealthy-gluten-free pancake!

I grew up with pancakes, but even when I was a kid, I realized early on that pancakes meant a mid-morning crash.

I’ve tried a zillion recipes for gluten-free or paleo or keto pancakes and I’ve found them all to be pretty lack-luster, so I decided to play around until I came up with a winner. The secret is the addition of tangy, probiotic kefir in the batter and flavor of extra-virgin olive oil!


Gluten-free pancakes with kefir

Ingredients

  • 1 1/2 cups cassava flour

  • 2 1/2 tsp baking powder

  • 1 tsp sea salt

  • 1 3/4 cups Lifeway plain kefir

  • 2 eggs

  • 2 TBSP extra virgin olive oil

  • 1/2 tsp vanilla extract

  • 2 1/2 TBSP powdered monkfruit sweetener

Method

1. Combine all the dry ingredients in a medium sized mixing bowl.

2. Combine all the wet ingredients in a large mixing bowl.

3. Using a whisk, slowly whisk the dry into the wet until forming a smooth batter without any lumps.

4. drizzle a little extra olive oil into a cast-iron pan over medium-high heat and add a ladle of batter. Cook until the pancake begins to bubble and the bottom is browned, then flip and cook until the other side is browned.

5. Repeat until you’ve cooked all of the batter.

6. Serve with fresh fruit, a fruit compote or maple syrup!
