Shaved Kohlrabi with Smashed Avocado

For my first Healthyish recipe, it's all about fat! 
Overwhelming evidence now shows that when we eat fat, we don’t get fat, however when we eat sugars, starches, and carbs, we do. This is really at the base of how I approach a healthy relationship with food: Reduce the simple carbs and increase the healthy fats, colorful vegetables, naturally raised meats, and wild seafood. Something remarkable happens when we actually do this: Our metabolisms increase, our gut flora (the new hallmark of health) diversifies, and our body compositions improve. It’s more nature than science, and it’s not that tough.

This recipe nails that philosophy!

Yes, it’s one more avocado dish. (I know, I know.) But this one brings together a world of flavors that are at once familiar and foreign, reminiscent of a place we think we may have been but can’t quite remember. It’s the Wes Anderson movie of avocado dishes. It’s also serious brain food: tons of healthy fats for brain function, fibrous vegetables for gut health, and ginger and garlic for immune function and to cool inflammation.

Ingredients

  • 2 ripe avocados

  • 1 small green chile (such as serrano), finely grated

  • 1 oil-packed anchovy fillet, finely chopped

  • 1 ½-inch piece ginger, peeled, finely grated

  • 1 garlic clove, finely grated

  • 3 tablespoons coarsely chopped cilantro leaves with tender stems

  • 1 teaspoon finely grated lime zest

  • ¼ cup fresh lime juice, divided

  • Kosher salt

  • 4 medium kohlrabi, peeled, very thinly sliced

  • 2 tablespoons avocado or grapeseed oil

  • 4 soft-boiled eggs, halved

Method

  1. Using a fork, coarsely mash avocados, chile, anchovy, ginger, garlic, cilantro, 2 Tbsp lime juice, and a generous pinch of salt in a medium bowl.
  2. Toss kohlrabi, oil, lime zest, remaining 2 Tbsp lime juice, and a pinch of salt in another medium bowl.
  3. Divide smashed avocado mixture among bowls. Arrange kohlrabi mixture and eggs around avocado and serve.
